Contrary to popular belief, thinking and eating vegan isn’t boring. In fact, it can be the most exciting dish in the world.


Sometimes, we just want to eat healthier. But this can be a challenge because we are surrounded with so many meaty recipes in restaurants, in delivery take-outs, in the fast food chain, they’re everywhere. It is also difficult if we aren’t a chef ourselves and the nearest food we know how to cook rice.

Don’t worry, we compiled these simple vegan recipes that you can try to start your journey of eating healthier and yummier.


Coconut Chickpea Curry

A warm curry recipe for cold cloudy weather. Coconut Chickpea curry is a recipe that you’ll end up making repeatedly because it’s that flavorful. It’s a celebration of spices and starch. Use fresh ingredients to get a deeper taste. This is a perfect family food that’s protein packed and nutritious. Pair it with rice or naan bread and you’re good to go.


Lentil and turnip soup with lemon

An easy way to eat healthily is this lentil and turnip soup with lemon which only takes 15 – 20 minutes of prep time. This is a comforting soup, especially for a cabin weekend getaway. The lentil adds filling to the soup and a squeeze of lemon is a perfect finale to almost every dish. This vegan soup only needs turnip to get a nice broth and a little salt to taste. Serve it fresh parsley and viola, comfy homey soup.


Potato Salad

This is by far the easiest in the list and the recipe with least ingredients. Be sure to use quality potatoes, soft and big canned peas, homemade dill pickles, and fresh dills. Start by getting your big bowl of salad and put it in all your ingredients! Include sugar in your ingredients because a vegan mayonnaise can be too thick and sour. Taste your mayo and add sugar if needed.


Vegan noodle – stir fry

If you’re craving for some Chinese food, then this is the right recipe for you. A stir-fry is one of the easiest foods to make: throw in the noodles in boiling water, remove the heat, and let it soak for several minutes. As you wait for that noodles, chop and cook the veggies. After which, you can go drain the noodles, throw all the ingredients altogether, and pour some soy sauce and sriracha.


Eggplant and potatoes with tomato sauce

The last easy fix on the list is the eggplant and tomato meal. The best part is that you can use a leftover boiled potato for this recipe. Make your weeknight extra thoughtful, healthy, and fantastic with eggplant, curry powder, boiled potatoes, tomatoes, and garlic. 


Prep all your ingredients and once done, heat up your pan and pour some oil. Add the cubed eggplant once heated and saute for several minutes. Add garlic, salt, and curry powder and continue cooking. Add your crushed tomatoes before closing the lid. Add the cubed potatoes, soy sauce, and tamari to taste. Garnish it with some fresh herbs before serving.
