Winter Vegetable Recipes for the whole family


The cold weather isn’t keeping us from making healthy foods for the family!


Vegetables are seasonal food. This means that some vegetables are available only in certain seasons, but things can be tricky during the winter. Many people think that having hearty healthy meals in the winter is next to impossible but that is not true. Winter is the time of the year that your family can enjoy home-cooked meals from vegetables such as sweet potatoes, turnips, and squash. Winter is the time to be creative and to be versatile.


Here are some of the recipes you could try that your family will enjoy!


Roasted Brussels Sprouts with Garlic and Ham

Brussels is best when roasted as it caramelizes the edges but keeps the inside tender. Roasted brussels sprouts are a great recipe especially on its peak season which is September to February. You will want small, firm sprouts with bright green heads. Remember, the smaller the head, the sweeter the taste. What do they say, good things come in small packages!


Butternut Squash and Parsnip Baked Pasta

 This recipe is entirely made up of vegetables and combines that sweet taste of butternut squash and parsnips. With it, you’ll have a healthy, spicy, and utterly satisfying meal. You can serve this for dinner and its sumptuous enough to be served to a crowd.


Sweet Potato Quinoa Salad with Kale Pesto

Smoky Butternut Squash Soup

We aren’t joking when we said squash is good for the winter! We have another recipe for you, the smoky butternut squash soup. This soup can get a little smoky from the canned chipotle chiles in adobo sauce then with a swirl of crème Fraiche, your soup is ready to be downed. This creamy soup is the perfect warmth for the cold weather!


Jicama, Citrus, and Watercress Salad

Give your table a little drama and spice with a watercress salad. This colorful salad plate is an explosion of different flavors. It is a combination of tasteful ingredients including watercress, orange, pomegranate and more. Good thing is that this recipe will only need 30 mins or prep time.


Simply put and blend the lime zest, pomegranate juice, agave nectar, and mustard in a blender and add a little oil. Put on salt and pepper as dressing. You then put the grapefruit and oranges in a bowl. Add the jicama, watercress and pomegranate seeds in a bowl, add the blended dressing, and then serve. Easy and yummy!


Shaved Carrot Tart with ricotta

Bring rainbow to your table with a pile of colorful carrot ribbons. The key to this ingredient is the flaky crust, so keep all the ingredients as cold as possible and don’t overdo your dough. As this potion can get too many, you can put your leftover in the fried and heat it in the oven the next day.
